Ginger Orange Chia Seed Pudding
Ingredients
1/2 cup full fat coconut milk
1 1/2 cups milk of your choice (dairy, almond, oat, etc.)
2 FPD East Navel oranges
1/2 cup chia seeds
1 tsp. freshly grated ginger
1 tsp. pure vanilla extract
2 tablespoons sweetener of choice (honey, agave, maple syrup, etc.)
Toppings of choice (granola, fresh fruit, nuts, etc.)
Directions
In a large bowl, combine both milks, the juice of 1 FPD East Navel orange, and chia seeds.
Add in grated ginger, vanilla, sweetener of choice, and stir to combine.
Cover and let chill in the fridge for at least 1 hour or up to overnight.
Serve with the second FPD East Navel orange (sliced) and any other desired toppings.
