Loaded Summer Salad

Ingredients - Salad

  • 2 cups arugula, chopped

  • 1/2 cup FPD East Thompson seedless grapes, halved

  • 1/2 cup honeydew melon, balled or cubed

  • 1/3 cup blue cheese, crumbled

  • 1/3 cup Israeli couscous

  • 1/4 cup fresh mint, chopped

Ingredients - Dressing

  • 1/4 cup extra virgin olive oil

  • juice and zest of one lemon

  • salt and pepper to taste

Directions

Add arugula, sliced grapes & melon, blue cheese, couscous, and mint to large serving bowl.

In a separate small mixing bowl, combine olive oil, lemon juice, zest and seasonings. Whisk vigorously to combine.

Pour dressing over greens mixture and gently toss to combine. Garnish with more blue cheese and fresh mint before serving.
